Blondies are a cousin of brownies and are basically the brown sugar version of their chocolate counterpart. A blondie – also known as a blonde brownie – came into popularity during the turn of the 20th century, even proceeding brownies in recipe books! This dessert bar resembles a chocolate brownie, but it substitutes vanilla for cocoa, and of course, it contains brown sugar. Blondies also contain flour, butter, eggs, and baking powder. Add-ins, like walnuts, pecans, or white or dark chocolate chips, are also popular. In fact, this version by Dinner at the Zoo is loaded with plenty of chocolate chunks for a fantastic treat that’s perfect any time of the day!

Ingredients:

• 12 tablespoons unsalted butter melted
• 1 1/2 cups dark brown sugar, packed
• 2 teaspoons vanilla extract
• 2 eggs
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 2 cups semisweet chocolate chunks, divided accordingly

Directions:

1. Preheat the oven to 350 degrees F. Line a 9 or 10-inch square pan with parchment paper, leaving an overhang on each side.
2. Coat the parchment-lined pan with cooking spray.
3. Place the butter and brown sugar in a large bowl and combine. Whisk in the eggs and vanilla extract until the mixture is smooth.
4. Add the flour, baking powder, and salt to the bowl. Stir gently until just combined.
5. Fold 1 1/2 cups of chocolate chunks into the dough.
6. Spread the dough in an even layer in the prepared pan. Press the remaining 1/2 cup of chocolate chunks into the top of the dough.
7. Bake for 20-25 minutes or until blondies are light golden brown and a toothpick inserted into the center comes out with just a few crumbs attached.
8. Let the blondies cool. Use the parchment overhang to remove the slab of cookie from the pan and cut it into squares. Serve and enjoy.
